Scallop Recipe #1: Scallop Omelet: Scallop Breakfast For The Family
The Perfect Breakfast: Scallop Omelet, Toast, and Avocado
The morning after spending the day out on the water catching our limit in scallops, I love to cook scallop omelets. This is indeed a breakfast the whole family will enjoy and won't forget. There is something about the taste of fresh scallops mixed in the omelet that gives it a one of a kind taste. This is a rather simple recipe that anyone can make and will take a limited amount of time. One tip that we can not stress enough is to use LOW HEAT. You do not want to burn your omelet
Scallop Omelet Ingredients:
- 1 Tablespoon Butter
- 4 Eggs
- 2 Tablespoon Cream Or 1 ½ Tablespoon Milk
- Salt And Pepper
- 1/3 Cup Grated Cheese. (I love using cheddar cheese or Gouda in my omelets.)
Scallop Filling:
- 1 Tablespoon Olive Oil
- 1 Cup Of Fresh Florida Bay Scallops
- 1 Cup Of Fresh Cut Onions
- 1 Small Minced Garlic Clove
- 1 Fresh Thyme Leaves & Finely Chopped Parsley (optional)
- 1 Cup Of Mushrooms (optional)
Cooking Your Bay Scallops With Onions
Instructions For Making Scallop Omelets:

Scallop Filling: In a small skillet add your 1 tbsp of olive oil. Add your fresh scallops and onions to the skillet and cook on medium heat. Add your garlic minced garlic clove and mushrooms if you decide to use them.
- Add your favorite spices to your scallops. One of our favorites is Everglades Fish & Chicken.

Cook on medium temperatures for about 5 minutes until the edges are golden brown. Remove from heat and save your cooked scallops for your omelet.
- Omelet: In a small bowl add your eggs, cream, and salt & pepper. Whisk until everything is mixed.
- Pre-heat a skillet to low heat. Add your butter to the skillet and allow for it to melt. Once it is fully melted, add your egg mixture. Allow for it to cook for 30 to 60 seconds and use a spatula to lift corners and allow for all the egg to run off the surface.
- Once the omelet begins to bubble, add your cheese and scallop filling. Carefully fold the omelet over the middle and allow for it to cook for another 30 seconds.
- Plate your omelet and pair it with any of your favorite breakfast sides like hash browns, toast and or fruit.

Scallop Recipe #2: Scallops On The Half Shell: A Delicious Scallop Appetizer
This is by far one of my favorite ways of serving fresh scallops. We clean our Florida bay scallops and leave them on the half shell just to make this dish. Yes, it will take up more room in the fridge/freezer; but it is well worth it. This is indeed such an easy recipe to whip up for an appetizer that your friends and family will love. The ingredients in this scallop recipe are the perfect combination for keeping your fresh caught scallops moist and tender when baking in the oven. Once prepared this recipe will take only a few minutes to cook. Impress your guests at your next dinner party with this one of a kind scallop on the half shell recipe.
Preparing The Scallop On The Half Shell
Scallop Half Shell Ingredients:
- 1-2 Dozen Freshly Cleaned Florida Bay Scallops On The Half Shell
- 5 Tablespoons Minced Garlic
- 4 Tablespoons Lemon Juice
- 3 Tablespoons Finely Chopped Parsley
- 4 Tablespoons Olive Oil
- Salt & Pepper
- 1 1/3 Cups Dry Breadcrumbs
- 1 Stick Of Softened Butter
Half Shell Preparation:
- In a mixing bowl add your garlic, lemon juice, parsley, and olive oil. Sprinkle in your salt and pepper and mix thoroughly. In another bowl add your breadcrumbs.
- Collect all your scallops in one bowl. Toss them in breadcrumbs and ensure an excellent outside coating.
- Arrange your half shells on a baking pan on some aluminum foil. Usually, you can fit anywhere from 9-12 on one pan. After the shells are aligned in place, add your breaded scallops. Because of the size of a bay scallop, I like to add 2-3 per shell.
- Once the scallops are in the shell take your garlic mixture and add it to the shell. Top with some additional breadcrumbs. Carefully slice a thin piece of butter from the stick and place on top. The scallops are ready for cooking.
- Preheat the oven to 425 degrees F.
- Bake for 10 to 12 minutes, or until the scallops are tender and the crumbs are golden brown.

If you are like my family, then you are always on the go. Sometimes the easiest dinners to make are ones that can be prepared fast. Tacos are a meal that can be prepared quickly and feed the whole family. Our one of a kind twist is our scallop tacos. This seafood taco is one that will have your taste buds dancing with delight and keep your family begging for more.
This quick seafood taco is perfect for any lunch or dinner. Add your favorite taco toppings to complete your scallop taco. At Hunting and Fishing Depot we like to add avocado and corn pico for flavor that is like an explosion of flavor in every bite. Scallop Taco's Preparation:
- In a large bowl mix your bay scallops with the olive oil, salt, and pepper. Make sure to coat the scallops evenly then store them in the refrigerator until ready for use.
- Heat the grill to 450 degrees F. Grill your corn ears, jalapenos and scallions for about 5-7 minutes. You should see the corn to begin charring which is the perfect texture you want for your corn pico.
- Carefully cut the kernels from the ear of corn. Take your grilled jalapenos and scallions chop them up finely (remove jalapeno seeds to reduce the heat). Once everything is cut, you can combine it in a bowl for mixing. Stir in your sea salt, cilantro, and lime juice. Corn pico is ready for topping once the scallops are cooked.
- In another bowl, cut out the avocado pit and scoop out it out from the skin. Mash it up in a bowl to give it a smooth texture. Think of guacamole texture when mashing. In individual bowls add your shredded lettuce, chopped tomatoes, and shredded cheese.
- After your toppings are prepared carefully grill your scallops for about 1 to 2 minutes. This is enough time to see grilling marks appear on the scallops. Be careful not to overcook; they will become dry and chewy when cooked too much.
- Warm your corn tortilla shells and serve all to the family. Let everyone fix their scallop tacos how they please.
How We Fix It: Lay your warm corn tortilla on the plate. Take a teaspoon of your avocado spread and cover your tortilla. Take a spoonful of the corn pico and spread it over the avocado. Add 4 to 5 bay scallops onto the soft shell taco. On top of the scallops add some shredded lettuce, chopped tomatoes, and shredded cheese. Squeeze a lime wedge over and enjoy!

Scallop Recipe #4: Grilled Sweet and Sour Scallops
If you are like me, then you love Asian inspired food. They prepare seafood in some of the best ways. I knew after we caught our limit in bay scallops I wanted a dish that would capture the flavors of an Asian dish, but not lose the exquisite taste that fresh bay scallops have. I had a friend who made this dish regularly, and boy was it a home run. I knew every time we went scalloping he would be breaking out his sweet and sour scallop recipe.

Sweet and Sour Scallop Preparation:
- In a large bowl mix together your rice wine and fresh ginger. Throw you fresh scallops into a Ziploc bag and add your rice wine mixture. Place them in the fridge and allow for them to chill for 30 minutes.
- In a saucepan, mix your brown sugar, ketchup, chicken broth, rice vinegar, soy sauce, cornstarch, sesame oil, minced garlic, and red peppers. Slowly bring the mixture to a boil over medium heat. Once it begins to boil only allow for it to stay on the heat for about a minute. Quickly remove and set aside to cool.
- Soak your wood skewers in water for about 30 minutes. This will allow them to soak enough water to keep them from burning on the grill. Once they are ready carefully place your scallops on them. Usually, you can get 4-5 bay scallops on one skewer. Leave about 1/2 inch space in between each scallop for cooking.
- Pre-heat the grill to 350 degrees. Bay Scallops will not take long to grill. Before you place the skewers on the grill brush them with the brown sugar sauce.
- Allow for the scallop skewers to cook for about 3 minutes on each side. Continue to brush the sweet and sour sauce onto them while they are cooking.
- After they are fully cooked, serve on a bed of rice with a side of the brown sugar sauce. Garnish with fresh chopped parsley and serve.

This is one of the more fancy ways to cook bay scallops. By grilling them, it allows them to hold their fantastic flavor. This dinner dish is full of so much flavor and will be an explosion of flavor in your mouth. Perfect for dinner parties to impress your guests.
Scallop Recipe #5: Bay Scallop Pasta
When we go scalloping, it is done as a family. I am always on the lookout for scallop recipes that can feed the entire family. This is one I came across that I knew was going to be a winner. How can you go wrong with bay scallops and gnocchi? The point is you can't, and this bay scallop pasta recipe will be one of your new favorite ways to make your freshly caught scallops.

Bay Scallop Pasta Ingredients:
- 1 lb Bay Scallops
- 1 Can Marinated Artichoke Hearts
- 1/2 cup Sun-dried Tomatoes
- 1/4 cup Lemon Juice
- 1 Stick Butter
- 1 Small Can of Olives
- 1 lb Chopped Spinach
- 1/4 cup Olive Oil
- Salt and Pepper
- Pasta of Your Choice (Gnocci is what we prefer at Hunting and Fishing Depot)
- 1 Slice of Chopped Bacon
- 1 tbsp Chopped Garlic
Bay Scallop Pasta Preparation:
- In a skillet add your bacon, garlic, butter, olive oil, and scallops. Saute everything together and ensure scallops are fully cooked. When scallops are cooked, remove and save for later.
- Add olives, sun-dried tomatoes, artichoke hearts, lemon juice, and spinach into a pan and allow for it to simmer for 15 mins. Add salt and pepper to taste.
- Cook your favorite pasta. Gnocci is one that is preferred by many and goes exceptionally well with this dish. Once the gnocchi is prepared, combine everything in a large bowl.
- Plate the bay scallop pasta for serving.
